This is another quick, easy dinner that is sure to please everyone! I know quick and easy is important during the school year when there are tons of extra curricular activities and busy schedules.
What you need:
- 1 bag Ore Ida Potatoes O'Brien
- 4 slices bacon, cooked and broken into pieces
- 1 to 2 cups cooked chicken (cubed, diced or shredded)
- Salt and pepper
- Shredded cheese
You can use precooked bacon (which I needed to get rid of the rest of mine) or real bacon.
If you use real bacon, save some of the grease to cook potatoes.
Cook potatoes over medium until browned, stirring occasionally to prevent sticking.
Add chicken and bacon and stir. Remove from heat and top with cheese; cover until melted.
