Every once in a while, I get the craving for pancakes...
It took me years to make a good pancake. I'm not sure why I had such bad luck. It mostly surrounded flipping and cooking them. They'd stick and burn or take forever to cook and fall apart.
Once I got the hang of it though, I've been experimenting with different types of pancakes. This recipe is actually pretty close to this recipe.

What you need:
- 1 egg
- 3/4 cup milk
- 2 tbsp. butter, melted
- 1 cup flour
- 1 tbsp. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
Add the rest of the ingredients and mix well.
Cook in a skillet or over a griddle, 1/4 cup of batter at a time, flipping when bubbles form and removing when sides are golden brown.
Serve with butter and syrup! Makes 8 pancakes.
