I'm pretty sure I've made fajitas in every which way possible, except for baking them. I thought this was definitely a very interesting method and wanted to try it asap. The fajitas were full of flavor and nice and juicy! I just want to also point out - it is SUPER difficult to get a pretty picture of tacos, burritos, fajitas, etc. LOL

What you need:
- 1 lb. chicken breasts, cut in strips
- 1 (15 oz.) can diced tomatoes
- 1 (4 oz.) can green chilies
- 1 medium onion, sliced
- 1 large green bell pepper, sliced
- 2 tbsp. vegetable oil
- 2 tsp. chili powder
- 2 tsp. cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. garlic
- 1/4 tsp. salt
- Flour tortillas, cheese, sour cream, guacamole, etc for serving
Mix chicken, tomatoes, chilies, onion, and pepper in a greased 9x13-inch pan.
Combine oil and seasonings in a small bowl and drizzle over chicken and veggies. Toss to coat.
Bake at 400* for 20 to 25 minutes.
Serve on tortillas with fixings.
